Note: this FAQ was written some years ago and is not very accurate anymore. I will re-write it asap

This website was first launched in 1995 and since then I have been flooded with email from people asking me a lot of questions regarding the ‘perfect Belgian Fries’. In this section I’ll try to answer the most frequently asked questions.

What potatoes to use?

This must be the most asked question and the answer is simple: Bintje! The problem is you will find this kind of potato, grown specially for fries, only in the Netherlands (Holland), Belgium and some surrounding countries. No bintjes in the USA as far as I know.

Most American fry shops use Russett or Yucon Gold

 

What oil to use?

The oil or fat you use determines the taste of the fries, it’s as simple as that. So it doesn’t matter what kind of oil or fat you use, as long as you like it. And of course, the oil has to be able to be heated at high temperature.

In ‘la Belgique’, fries used to be cooked in a mixture of horse fat and beef fat. They don’t do that anymore for economic and health reasons. Beeffat is still very popular but more and more people use special vegetable oils.

In the USA I understand peanutbutter oil is very popular (and very ‘veggy’).

Final but important remark: do not use the same oil over and over again. Oil tends to break down because of the constant cooling and re-heating and should not be used more than 10 times.
 

Are fries fattening?

As you can see these 2 guys are not fat at all and they eat fries every day! Fries are not fattening if you follow these rules: cut them thick (the thicker the fries, the less fat they absorb), follow the instructions on the recipe-page carefully and do not eat too much sauces. The best fries are tastefull enough and do not need fattening sauces as a companion.

Who are you? Are you in the Fries business?

No, I’m not in this business, at least not at this moment. I do not own a frietkot. To be honest: I’m just an ICT guy that loves fries. I’m Dutch but was born in Belgium where I have been living all my life.
